What I did (and what I often do with Jazz mixes)
-Pan the OH stereo image fairly wide
-Hard (24dB/oct) highpass filter the stereo image, hard filter away all F lower then aprox. 300Hz
-Put the HH fairly at the right (+/-25%) to complete the natural stereo image if you would be standing in front of a drumkit.
-If necessary highpass the HH too.
-Use an amount of exciter (aphex aural) on your OH stereo image
-Use an amount of exciter (if necessary) on the HH (for a sparkling HH chick)
-DON'T try to curb (compress) any dynamics of the drumkit in general, while in Jazz dynamics is too delicate, so about compressing keep it as clean as possible.
So thats what i mostly do

Thanks so much for your description of your overheads processing. I wish I had an exciter but I'd probably abuse it! LOL! I do most of the things you mention (recording and content specific, of course) so I'd guess the difference is the exciter.. Nice to know.
